Peach Salsa

Makes 2 cups. Recipe is by Cynthia Nobles, who says, “The slight sweetness of this salsa makes it absolutely terrific on grilled chicken and pork. And it’s a great way to use up aging produce.”

3 fresh peaches, peeled, pitted and chopped

2 large fresh tomatoes, seeded and chopped

1 pear, peeled, cored and chopped

¼ cup finely chopped green bell pepper

1 fresh jalapeño pepper, seeded and minced

2 tbls. finely chopped red onion

1 tbl. minced cilantro

½ tsp. minced fresh garlic

¼ cup sugar

¼ cup lime juice

1 tsp. salt

Combine all ingredients up to 8 hours ahead of time. Cover and refrigerate until ready to serve.
