Green Beans and Toasted Almonds
Makes 4 servings. Recipe is from Corinne Cook.
1 pound fresh green beans
1/3 cup sliced or slivered almonds, toasted
1 teaspoon plus ¼ cup butter, divided
Juice of 1 lemon
1. Rinse and drain beans. Pat dry. Snip off ends; leave whole or cut in half. Steam in small amount of salted water until cooked to your liking. Drain and cool quickly in ice water. Drain well.
2. Toast almonds in 1 teaspoon butter until lightly browned. Watch carefully because they will burn quickly. Remove from skillet onto paper towels when browned. Set aside to garnish beans before serving.
3. In separate small saucepan, melt butter. Remove from heat and add juice from 1 lemon.
4. Just before serving, reheat beans in the microwave. Gently toss beans in the melted butter/lemon mixture and toasted almonds.
