Cornbread is often served when chili is on the menu, so I decided to try the new cornbread baking mix from Zatarain’s.
The company offers two cornbread flavors — cheddar jalapeño and honey butter. I prepared the cheddar jalapeño flavor, which calls for adding shredded cheese, milk and an egg. The mix produced a tasty, crumbly cornbread, which my guests and I liked. The company describes its product as “southern-style” but that depends on if you side with those who say Southern cornbread should never include sugar or wheat flour. Zatarain’s cornbread mix includes yellow corn meal, sugar, and wheat and malt barley flours.
I later tried Zatarain’s Cheddar Garlic Biscuit Mix. Add milk, cheddar cheese and butter, then drop by quarter-cups onto a baking sheet. They’re easy to prepare and the box offers several stir-in ideas.
