ADVOCATE-TESTED RECIPE

Marmalade Glazed Chicken Strips

Serves 4-5 or more if serving for appetizers.

About 1½ pounds chicken tenders (10-12 tenders)

Salt, black pepper

½ cup orange marmalade

¼ cup steak sauce

1 tablespoon horseradish, or to taste

2 tablespoons honey

1 tablespoon fresh lime juice

Hot pepper sauce (I used Tabasco Chipotle Sauce)

Green onions, garnish

1. Preheat oven to 350 F. Lightly spray rimmed baking pan with nonstick coating and set aside. 

2. Rinse chicken and pat dry with paper towels.

3. Lightly season chicken strips with salt and pepper and place them on prepared baking pan.

4. Bake chicken tenders for 15 minutes or until almost cooked.

5. While chicken is cooking, in medium mixing bowl, stir the orange marmalade, steak sauce, horseradish, honey and lime juice together.

6. Remove chicken from oven, and when it’s cool enough to handle, put chicken on skewers; leaving some whole and, if desired, cutting some in half and putting both pieces on one skewer.

7. Brush or spoon glaze over each piece of chicken and return it to the baking pan.

8. Continue baking for an additional 15 minutes, or until chicken is cooked through. Baste again.

9. Sprinkle with a few drops of hot sauce and chopped green onions.


Glazed Chicken with Orange Marmalade and Barbecue Sauce

1½ pounds chicken tenders, rinsed and patted dry

½ cup orange marmalade

¼ cup barbecue sauce

1 teaspoon soy sauce

1 clove garlic, minced

1½ teaspoons ground ginger

Red pepper flakes

Chopped green onions

1. Preheat oven to 350 F. Lightly spray rimmed baking pan with nonstick coating and set aside. 

2. Rinse chicken and pat dry with paper towels.

3. Lightly season chicken strips with salt and pepper and place them on prepared baking pan.

4. Bake chicken tenders for 15 minutes or until almost cooked.

5. While chicken is cooking, in medium mixing bowl, mix barbecue sauce, marmalade, soy sauce, garlic and ginger. Stir to blend.

6. Remove chicken from oven, and when it’s cool enough to handle, spear pieces on skewers (if desired).

7. Brush or spoon the glaze over the chicken and return it to the baking pan.

8. Continue baking for an additional 15 minutes, or until chicken is cooked. Baste again.

9. Sprinkle with red pepper flakes and chopped green onions, if desired.
