No-Bake Chocolate Oatmeal Cookies
Makes 36 to 42 cookies. Recipe from Tillie Baker’s files was modified by Cheramie Sonnier.
½ cup milk
2 cups sugar
½ cup unsalted butter
4 tablespoons cocoa
¼ teaspoon salt
½ teaspoon vanilla extract
½ cup peanut butter
3 cups quick oats or 2½ cups old-fashioned oats
1. Bring milk, sugar, butter, cocoa and salt to full rolling boil in a 3-quart saucepan; boil 2 minutes. Remove from heat.
2. Add vanilla and peanut butter and stir until peanut butter is melted. Add oats; mix well. Drop by spoonfuls onto waxed paper to cool.
Note: My mother’s version calls for boiling the sugar and milk for 1 minute, then adding the cocoa, vanilla, peanut butter, salt and oats and beating until consistency to drop onto the waxed paper.
