The executive chef of Pat’s Fisherman’s Wharf in Henderson is set to open a new restaurant in Baton Rouge this summer on Jefferson Highway.
Jude Huval said Pat’s Cajun Seafood and Steak will offer a mix of classic dishes, such as crawfish bisque, turtle soup and fried seafood platters, along with grilled fish and zydeco grits. The restaurant is set to open in June in the space that had formerly been occupied by Las Palmas Mexican Restaurant at 8200 Jefferson.
“I’m a true Cajun,” Huval said. “I’m going to sell the swamp.”
Huval’s parents, Agnes and Pat Huval opened Pat’s Fisherman’s Wharf in 1952. A sister restaurant opened in Lake Charles in 1982, when Nancy and Ricky Perioux, their daughter and son-in-law opened Pat’s of Henderson. Now Huval is striking out with his own restaurant.
Huval has ties to Baton Rouge. He’s a graduate of the Louisiana Culinary Institute, and in the mid-1980s, he worked for the Pat’s of Henderson on Bluebonnet Boulevard. But in 1987, he was severely injured in a car accident that left him in a coma. While Huval was recuperating from the accident, Pat’s went out of business.
“That left a bad taste in my mouth,” he said.
For the past few years, Huval has been looking for locations in Baton Rouge to launch a new restaurant. After some negotiations, he agreed to take over the Las Palmas building.
“We’re adding on a crawfish boiling shack,” he said. “And we’re cleaning it up.”
Plans are for the restaurant to be open seven days a week and have a full bar.
