Baton Rouge has a new stop for boudin and boiled crawfish.
All Star Catering – Market has opened at 633 S. Foster Drive at the corner of Government St., and the store features the two Louisiana staples.
The concept comes from chef/owner Brian Medlin, who currently owns and operates Smokin Aces BBQ at 2504 Government St. and All Star Catering.
Medlin said in a press release that the shop makes boudin in small batches. Each link is stuffed and twisted by hand.
“Boudin is just one of those things that is not meant to be rushed,” Medlin said. “It has to be local and hand crafted. It’s an amazing process, and something we are excited to participate in every day.”
In addition to smoked boudin links, boudin eggrolls and boudin balls, the market sells boiled crawfish that gained recognition at Medlin’s first Cajun restaurant, Opie’s Cajun Café in Mid City in Baton Rouge, which opened in 2006 and is now closed.
Medlin’s Louisiana PoBoys in Lafayette at 5455 Johnston St. is still open.
