A popular Perkins Road bar is expanding and adding some local talent.

Olive or Twist will take over the space that was formerly Painting and Pinot, and expand its services to become a full service restaurant, called Olive or Twist Bar + Kitchen.

Construction has not yet begun, and there is no timetable for opening, but there will be room for more than 60 patrons. Painting and Pinot will move a few doors down in the same shopping center.

Olive or Twist owners Scott Gremillion and Josh Duke have hired Richard Markert as executive chef. Markert is the owner and chef at Taste, a restaurant located in downtown’s Main Street Market.

Markert said that Taste will close Saturday, Feb. 27. Markert said there are no hard feelings between he and BREADA, the organization that runs the Red Stick Farmers Market and Main Street Market.

“BREADA has been fantastic to me,” he said. “An opportunity came up, and I have been looking for a bigger spot. It’s something I’ve been wanting to do for awhile now, and I get to do it without the hassle of being the owner.”

Olive or Twist Bar + Kitchen will open for lunch and dinner during the week, and brunch on Saturday. Business hours have not been set. Markert’s signature take on Louisiana food will come with him.

“I want our food to be known as much as the bar is known for its cocktails,” Markert said. “It’s going to be a modern Louisiana kitchen. We want to cook and think outside of the box.”

Though the menu isn’t set, Markert said that some of the things he’s working on incorporating include housemade praline rum bacon, an Olive or Twist burger with a pork belly and beef patty, red beans and risotto, New Orleans-style fried chicken and cochon de lait cakes.
