The Louisiana Culinary Institute in Baton Rouge has announced four baking and pastry classes in the next few weeks:

  • Petit Four Cookies, 10 a.m.-1 p.m. Saturday, Chef Christina Nicosia. Learn to pipe, roll out, fill and garnish a variety of small cookies, including cocoa mocha sandwich cookies, classic spritz, chewy coconut macaroons, and white chocolate lemon cookies.
  • Easy Italian Pastries, 3-6 p.m. Saturday, Chef Derrick Beverley. Learn easy ways to make traditional Italian desserts like tiramisu, biscotti, Italian cheesecake tarts, and zucchini cake.
  • Dessert Terrines, 10 a.m.-1 p.m. Saturday, May 7, Nicosia. Learn the differences among mousse, bavarians and chiffons; and build a layered dessert with all three.

Mother’s Day Cake Decorating, 3-6 p.m. Saturday, May 7, Beverley. Participants will be guided in making a cake just for mom. If a sugar-free cake is needed, please RSVP at least a week in advance of class.
