Yields 8 small burgers or 6 large burgers.

1-1/2 lbs. 90% or 93% lean ground beef

1 medium onion, finely diced

1/4 cup minced parsley

1/4 cup minced mint

1 tbl. paprika

1/4 tsp. cinnamon

1/2 tsp. cayenne pepper

1 tsp. salt

1 tbl. ground cumin

Juice of 1 lemon

1 egg, lightly beaten

3 tbls. olive oil, for frying if using a skillet or griddle

1/2 cup hummus

Lettuce, tomatoes, pickles, for serving, optional

1. In a medium bowl, combine ground beef, spices, lemon juice, onion and egg. Shape meat into 8 patties.

2. If using a skillet or griddle, warm olive oil over medium heat and cook burgers until nicely browned on each side, about 4 to 5 minutes per side.

3. If using a traditional grill, grill burgers for 7 to 8 minutes per side.

4. Spread layer of hummus on the bottom of bun. Top with burger and garnish of choice. Spread more hummus on top bun. Serve.
