Want just a taste of sweet pea soup to serve with a sandwich? You can have more than a demitasse cup if you like.

This quick but intense tasting soup is made with frozen sweet peas that are simply puréed and mixed with a bit of sautéed onion and cream.

Garnish with a bit of fresh dill, basil or mint to add another hint of flavor. I puréed the peas first in the food processor, then heated them with the cream. I did not try it; but, I think you could cook the peas for five minutes in the cream then purée with a submersible blender in the pot.
