My children love nothing more than pasta and chicken, in that order. So I am forever searching for different and somewhat interesting ways to prepare those two sure-to-please dinner staples.

This is another recipe that I found on the U.S. Department of Agriculture’s Snap-Ed website, which I have been playing with since discovering its hundreds of inexpensive, easy recipes that include information on the cost-per-serving and nutritional content.

I adapted the recipe a bit. It called for 3/4 pound of cooked chicken. I used about 1-1/4 pounds and grilled the chicken first. (I included my method but you really can prepare the chicken any way you like, or use leftover baked chicken). I also substituted canned tomatoes for fresh. Regardless, it is a nice, fresh easy dinner that everyone really enjoyed.
