Kale and Brussels Sprouts Salad

Serves 8. Recipe is from Naz Butcher. She sometimes uses packaged baby kale mix in place of all kale in this salad. The recipe makes 1¼ cups dressing. You may have leftover for another salad.


1 cup olive oil

1 or 2 garlic cloves, pressed or finely minced

2 tablespoons fresh lemon juice

2 tablespoons balsamic vinegar

2 tablespoons finely minced red onion (or green onions)

Salt and black pepper to taste


About 1 pound kale (or baby kale, or baby kale mix)

12 ounces fresh Brussels sprouts, shaved or finely chopped

1?3 cup dried cranberries, or more if desired

1?3 cup sliced almonds, toasted if desired

2 avocados, cubed (add these at last minute)

About 1 cup crumbled feta or as desired

1. Combine dressing ingredients and set aside while you prepare salad.

2. In large salad bowl combine kale, shaved Brussels sprouts, cranberries, almonds and avocado.

3. Add desired amount of dressing to salad and then arrange on salad plates. Sprinkle crumbled feta cheese on top.
