Serves 4 to 6. This isn’t really a recipe but is a suggested way to serve Manchego cheese as an appetizer.

4 to 6 ozs. Manchego cheese, cut into thin slivers or cubes

2 tbls. olive oil, or to taste

Freshly ground black pepper, to taste

Salt or sea salt if you have it, optional


4 to 6 ozs. quince paste or guava paste, cut into small cubes (You can coat the cut ends in ground pecans or almonds to “fancy” it up if you like.)

1 to 2 fresh pears, sliced OR sliced and wrapped with a paper-thin strip of prosciutto or ham around the middle

Grapes, strawberries, kiwi

Small crackers

1. Remove rind from cheese. Cut it into slivers or cubes and place on pretty plate.

2. Lightly drizzle with a good olive oil. Sprinkle with freshly ground black pepper and a light sprinkling of sea salt if you like.

3. Serve with small cubes of quince or guava paste, either on toothpick or on cracker. Or, serve the cheese alone as a pickup with the pears, grapes, berries and crackers on the side.
