Nutty Potato Chip Cookies
Makes 11/2 dozen. Recipe is from Susanne Duplantis. Food coloring can be added to dough for holidays and finished cookies can be dipped in melted chocolate.
1 stick of butter, room temperature
¼ cup sugar
½ teaspoon vanilla
1 cup flour
¼ cup potato chips, crushed (bottom of bag)
1 tablespoon nuts, chopped (cashews, pecans, walnuts or peanuts)
1 tablespoon chocolate cocoa nibs or chips (optional)
1. Preheat oven to 350 F.
2. Slice butter into a mixing bowl. Cream butter and sugar with wooden spoon. Add in vanilla and flour. Mix in potato chips, nuts and chocolate. Use rubber spatula to mix well.
3. Roll out and cut with cookie cutters or drop by teaspoons onto an ungreased cookie sheet. Bake 13-15 minutes. Let cool.
