Chicken Chickpea Dinner

Serves 6 to 8. Recipe is by Julie Kay.

½ head cauliflower, broken into small sections

3 boneless, skinless chicken breasts

3 carrots, peeled and cut into sticks

1 tbl. garlic powder

1 tbl. black pepper

1 tbl. Creole seasoning (may use salt-free)

1 bell pepper, chopped

1 (15.5-oz.) can chickpeas or garbanzo beans, drained

1 (14.5-oz.) can petite diced tomatoes (may use low-sodium, if desired)

Brown rice, cooked

1. Put all ingredients except the rice into slow cooker in the order listed.

2. Cook on Low for 6 to 8 hours.

3. Serve over cooked brown rice.
