Pumpkin Spice Coffee Mix

Makes 5, ¼ cup servings

3 tablespoons canned pumpkin

1½ teaspoon pumpkin pie spice

1/8 teaspoon cinnamon

1 cup milk

1 teaspoon maple syrup

½ teaspoon vanilla powder or vanilla extract

1 pinch salt

1. Add pumpkin, pumpkin pie spice and cinnamon to a small saucepan. Cook over medium heat, stirring constantly for 2 minutes.

2. Add milk, maple syrup, vanilla powder or extract, and salt to the pan. Cook for 3 more minutes, stirring to combine all ingredients.

3. To assemble drink, add ¼ cup of pumpkin pie spice mixture to 1 cup coffee. Sweeten as desired and enjoy.
