Serves 75 to 100.

12 cloves garlic, chopped

8 large onions, chopped

2 tbls. olive oil

3-1/2 lbs. smoked sausage, cut in small pieces

4 lbs. Camelia brand dry red beans

3 gal. water

Salt and black pepper, to taste

Cooked rice, for serving

1. In large heavy pot, sauté garlic and onions in olive oil until wilted.

2. Add meat and brown slightly. Add beans, water, salt and pepper and cook, uncovered, for about 4 hours or until beans are tender.

3. Serve over rice. Also freezes well.
