Brandied Peaches

Yields 4 servings. Recipe is from Teresa B. Day.

1/3 cup sugar

1 cup water

1 teaspoon vanilla

1 tablespoon brandy

1 cup peach slices, fresh or frozen

Bring sugar, water and vanilla to a boil in a small saucepan, stirring until sugar is dissolved. Reduce heat and whisk in brandy. Add peaches and simmer until tender, about 3 or 4 minutes. Serve peaches and syrup over ice cream or with whipped cream.
