Spinach Mushroom Kugel

Makes 1 (9-inch) dish. Recipe is by Jamie Geller, author of the “Quick & Kosher” cookbook series.

1 (1-lb.) p kg. frozen spinach, defrosted

1 (8-oz.) can sliced mushrooms, drained

2 eggs, separated, with whites whipped

1/2 cup mayonnaise

2 tbls. onion soup mix

1. Preheat oven to 350 degrees. Place all ingredients in a large bowl and mix until well combined.

2. Pour into a 9-inch round baking dish and bake for 45 to 50 minutes. It can also be poured into an uncooked, defrosted pie shell if desired. Bake as instructed.
