Mardi Gras is upon us, and king cake season isn’t just in full swing, but quickly waning. With less than two weeks before they disappear from the shelves, here are some of the more creative and unorthodox takes on king cakes we’ve come across this year, and where you can find them.

Cavan chef Nathan Richard's crawfish and goat cheese king cake is topped with cream cheese, pepper jelly, crab fat sugar, and if that's not enough, diners have the option of making it a Rex - adding Cajun (bowfin) caviar for an extra $3.

A king cake dessert (for two people) is filled with bacon jam and cinnamon, and topped with candied bacon.

Pastry chef Maggie Scales’ savory soft pretzel king cake is topped with purple, green and gold salt, and served with a side of whole grain mustard. Also returning this year is The Elvis king cake, filled with peanut butter, banana and topped with bacon, marshmallow and sprinkles.

At chef Carl Schaubhut’s Oak Street restaurant, the king cake souffle features an almond and cinnamon cake base and a Creole cream cheese and citrus glaze.

The king cake milkshake at the Mid-City barbecue hub features a malty vanilla ice cream shake topped with whipped cream, a slice of cream cheese-frosted king cake, and purple, gold and green sugar sprinkles.
