Brian Mottola named chef de cuisine at Emeril's NOLA_lowres

Brian Mottola will take over as the new chef de cuisine at Emeril Lagasse's French Quarter restaurant NOLA.

Brian Mottola, a veteran of the Emeril Lagasse empire, is taking over as chef de cuisine at NOLA (534 St. Louis St., 504-522-6652), Lagasse’s French Quarter Creole and Southern-inspired institution.

Mottola began his career working for Lagasse nearly two decades ago, starting out as a line cook at the celebrity chef’s flagship restaurant Emeril’s New Orleans in 1997 before moving on to Las Vegas where he helped open Lagasse’s Delmonico Steakhouse.

Mottola, a New Jersey native with Italian roots, then moved on to stints in San Francisco, where he worked under chef Nancy Oakes, Charlotte, NC, and New Jersey, eventually opening up his own restaurant.

At NOLA, Mottola replaces chef de cuisine Joshua Laskay, who died in April at the age of 38.


“Whenever we have the opportunity, the Emeril’s organization always looks to promote talented individuals within the family, already familiar with the Emeril’s culture,” Eric Linquest, president of Emeril’s Homebase, said in a release.
