This year brought a shorter than usual Carnival season to New Orleans. That means the window for king cakes is narrowing. In fact, we are already almost halfway through it.
I’ve been packing them in as the season progresses. While I’m on the record for my respect and affection for the classic king cake, this year I’ve been devoting my personal king cake capacity to trying new twists on the idea.
The possibilities are endless. This week, I’m giving some highlights and we continue with a glorious combination cake.
King Cake Doberge at Bakery Bar

The dessert case at this unique bakery/café/bar in the former home of Eleven79 gleams with purple, green and gold treats this time of year. The crown goes to a creation that rolls together two local obsessions – king cake and doberge.
This seven-level stunner has cinnamon and vanilla-scented cake layered by cream cheese pudding and capped by buttercream frosting and cream cheese icing. Balancing airy and rich, those carefully delineated layers keep together as the fork travels through them, giving you stripped peels of cake and cream.
Charlotte McGehee, baker and co-proprietors here, came up with this cake a few years back, and it's now a perennial seasonal hit. Whole cakes fly out the door on special orders, individual slices are dispatched on site or taken to go by those after a mid-day fix.
McGehee earned her local following on doberge, first through her cheekily-named cake brand Debbie Does Doberge. Her café, which opened in 2016, is not called Bakery Bar for nothing. There’s a full bar with classic and original cocktails on the list and a bottomless mimosa special on Tuesdays (11 a.m.-3 p.m.) for a service industry-friendly brunch.
This time of year, that mid-day happy hour could double as a little Fat Tuesday warm up.
